Food is something that can bring people closer. This is what seemed to happen when I first tasted Garganelli pasta made by one of my Italian friend. The uniqueness of the dish lied in its processing, which was completely homemade. I could not resist but learn the recipe and also order a Garganelli comb (a kitchen tool) all over from Italy to make the dish myself.
Garganelli pasta is a traditional Italian dish. Here I thought to share the recipe of this mouthwatering dish so that all of you can have the pleasure preparing this fresh platter at home.

Ingredients
4 eggs
400 gm semolina flour
100 gm grated parmesan cheese
100 gm cooked hem
2.5 dl cream
Nutmeg
Butter
Method
First, take the flour in a bowl and add nutmeg and eggs. To this add the grated parmesan cheese and mix well into soft and silky dough. It may take around 10 minutes. Wrap the dough in a plastic sheet and keep in fridge for 30 minutes. Take out dough after 30 minutes, and make thin sheets out of it using rolling pins or pasta laminators (if you have).
Now cut these sheets into 5cm/2 inches sections and roll each on the Garganelli comb starting from one point, ending to another. This will give the pasta shape. When all are done, let the Garganelli dry over a clean surface.
Now to prepare the dish, boil water in a large pot, add some salt and pour Garganelli in it. Keep checking the pasta, and remove them when almost cooked (not completely).
For the sauce, cut the ham into small square pieces. Take a deep frying pan over the stove and heat butter in it. Then, add the ham pieces. Pour the cream into the pan and reduce it to a thickness when it can coat pasta properly. Add Garganelli to it and mix well. Allow it to cook for a few more minutes and remove from stove.
